Vegetable Pasta Sauce

This is such a simple and tasty pasta sauce. It’s a great way to get more vegetables in your diet. Perfect for little ones.


  • 2 yellow peppers
  • 4 tomatoes
  • 2 small red onions
  • 4 cloves garlic
  • Olive oil
  • 1-2 tsp dried or fresh herbs
  • 1/2 cup cashew nuts (soak in hot water for 15 mins)
  • 1/2 cup almond milk
  • 1/2 cup water (add more if needed)
  • Salt and pepper to taste
  • 1-2 tsp nutritional yeast (optional)


  1. Chop the vegetables and garlic and place in a baking tin.
  2. Drizzle with olive oil
  3. Roast in the oven for about 20 mins
  4. Once done, place in a blender along with the other ingredients. Blitz together until smooth
  5. Warm in a saucepan and use as a sauce for pasta

You can use any other vegetables you have in the fridge. You could also leave out the cashews if preferred. Make it your own!
