Buckwheat Pancakes

PANCAKES! These are my favourite thing to have on a Sunday morning. I often make these for my nephew as they are super tasty, healthy and so easy to make. You can even make these the night before and keep them in the fridge. In the morning, pop them in the toaster and they are good to go.


  • 1 cup buckwheat flour (or self raising flour)
  • 1 flax egg (1tsp of milled flax mixed with 2-3 tsp water)
  • 1 teaspoon baking powder
  • 1 cup of plant based milk
  • 1 tbsp coconut oil
  • Maple syrup
  • Berries/chopped fruit


  1. Make the flax egg and leave to sit.
  2. Add 1 cup of sifted buckwheat flour and the baking powder to a mixing bowl.
  3. Add in the milk and the flax egg and mix thoroughly until a thin batter forms.
  4. Leave mixture for 5 minutes to thicken.
  5. Heat a frying pan with some coconut oil and wait until hot.
  6. Pour some of the mixture into the pan to form a pancake shape.
  7. Cook until small bubbles appear. Flip and cook other side.
  8. Serve pancakes with a drizzle of maple syrup and berries.
  9. Enjoy!
