Miso Chickpeas on toast

This is such an easy and nutritious recipe that can be used for breakfast, lunch or as a snack. My new favourite toast topper.


  • 1 can of chickpeas
  • 1 chopped avocado
  • Juice of half a lemon
  • 1 tsp toasted sesame oil (or use olive oil)
  • 1 chopped spring onion
  • 1 tbsp brown or white miso paste
  • Sesame seeds (optional)
  • Sourdough bread


  1. Drain the chickpeas, rinse and add to a bowl
  2. Add in the lemon juice, miso and oil and mix together
  3. Using a potato masher, crush all the ingredients until a rough paste forms (I prefer it chunky)
  4. Add the chopped avocado and spring onions and fold through
  5. Sprinkle some sesame seeds on top and serve on sourdough toast
