Plant based, sugar free berry crumble

Berry Crumble

This is a delicious warming berry pudding that can be enjoyed anytime. It’s easy to make and takes less than 30 minutes to cook. My favourite dessert that is full of vitamins.

Ingredients

Crumble:

  • 1 cup of gluten free oats
  • 1/4 sunflower seeds
  • 1/4 pumpkin seeds
  • 1/2 tablespoon coconut oil
  • 1 tablespoon maple syrup
  • pinch of cinnamon

 

Filling:

  • 1 cup of mixed berries (raspberries, blueberries, blackberries)
  • 1 chopped apple (optional)
  • 1 tablespoon maple syrup
  • 1 teaspoon coconut oil
  • 1/2 teaspoon cinnamon

Method

  1. Heat the coconut oil in a pan
  2. Add in the berries, apple, cinnamon and a little water
  3. Allow to cook for about 5 mins until soft and add maple syrup
  4. While the fruit is cooking, blend together the crumble ingredients in a food processor until all is broken down (not too fine)
  5. Add the cooked fruit to an oven proof dish
  6. Add the crumble on top
  7. Place in the oven for 20 mins until slightly browned on 180 degree heat
  8. Enjoy with some coconut yoghurt or on it’s own
