Berry Crumble

This is a delicious warming berry pudding that can be enjoyed anytime. It’s easy to make and takes less than 30 minutes to cook. My favourite Autumn dessert that is full of vitamin C and healthy fats.

Ingredients

Crumble:

  • 1 cup of gluten free oats
  • 1/4 sunflower seeds
  • 1/4 pumpkin seeds
  • 1/2 tablespoon coconut oil
  • 1 tablespoon maple syrup
  • pinch of cinnamon (optional)

 

Filling:

  • 1 cup of mixed berries (raspberries, blueberries, blackberries)
  • 1 tablespoon maple syurp
  • 1 teaspoon coconut oil
  • 1/2 teaspoon cinnamon

Method

  1. Heat the coconut oil in a pan
  2. Add in the berries, cinnamon and maple syrup
  3. Allow to cook for about 5 mins until soft
  4. While the berries are cooking, blend together the crumble ingredients in a food processor until all is broken down (not too fine)
  5. Add the cooked berries to an oven proof dish
  6. Add the crumble on top
  7. Place in the oven for 20 mins until slightly browned on 180 degree heat
  8. Enjoy with some coconut yoghurt or on it’s own
