Banana bread

This banana bread is gluten free as I use buckwheat flour instead. Buckwheat flour can be quite dense, so adding the ground almonds makes it lighter and tastier. You could also add in some walnuts or some chocolate chips for a different flavour. It is perfect with a nice cup of herbal tea and some nut butter. Enjoy!


  • 2 large bananas
  • 1/3 cup coconut oil
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 90 ml water
  • 1 cup coconut sugar
  • 1 cup ground almonds
  • 1/4 buckwheat flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda


Mash two bananas
Add melted coconut oil, vanilla extract, apple cider vinegar and water and mix
Then add in the rest of the ingredients and mix until well combined
Pour into a greased baking tin
Bake in the oven for 45 minutes at 180C
Allow to cool and serve
